Brewer

The Role

Based in our brewery on Walthamstow’s Blackhorse Beer Mile, we’re looking for an experienced and hands-on Brewer to join our dedicated production team.

This is a varied production role with responsibility across the full brewing process, from raw materials and wort production through to the final packaging of our beers into keg, cask, and can.

You’ll work with high-specification craft brewing and packaging equipment on a daily basis, while also having the opportunity to develop your technical skills, contribute to recipe development and hone your own recipes on our pilot brewing kit.

The successful candidate will be organised, technically minded and comfortable working across both the brewery and packaging hall, with a strong focus on quality, consistency, hygiene, safety and delivering beer on schedule.

Key Responsibilities

Brewing & Production

• Manage the brewing process from milling and raw material preparation through to wort production.
• Operate and monitor brewing equipment, and water systems
• Carry out CIPs of brewing and production equipment to the required standards.
• Monitor production throughout the process to ensure beer is produced safely, efficiently and to specification.
• Work closely with the wider production team to ensure beers are produced and packaged on schedule.
• Maintain accurate production records and ensure all relevant documentation is completed correctly.

Cellar Operations

• Monitor fermentation temperatures, gravities and cell counts and escalate any issues promptly.
• Carry out dry hopping.
• Manage yeast collection, storage and pitching.
• Centrifugation and carbonation of beer. 

Packaging

Packaging is a key part of this role, and the successful candidate will be expected to take an active role in the packaging operation.

• Package finished beer into keg using our dual semi-automatic keg fillers.
• Package beer into cans using the ABE Lincan canning line.
• Carry out packaging quality checks, including fill levels, carbonation, pack integrity, date coding and general presentation.
• Assist with packaging changeovers, line cleaning and routine maintenance.
• Work closely with the Packaging Manager and wider production team to maintain high standards of efficiency, quality and hygiene.

Quality, Hygiene & Compliance

• Maintain consistently high standards of hygiene across brewing, cellar and packaging.
• Ensure production and storage areas are clean, organised and maintained to a high standard.
• Follow all relevant Standard Operating Procedures (SOPs).
• Participate in regular quality control sessions and sensory evaluation.
• Ensure production activities comply with company quality standards and relevant industry requirements.
• Maintain a strong understanding of food safety, traceability and brewery compliance requirements, including SALSA standards.
• Maintain a high level of Health & Safety awareness at all times.

Wider Responsibilities

• Represent Signature Brew at events, festivals and other industry activities where required.
• Work collaboratively across the wider brewery and production team.
• Support other areas of brewery operations when required.
• Contribute to a positive, professional and collaborative working environment.

The Ideal Candidate

We’re looking for someone with previous commercial brewing experience who is confident working across both brewing and packaging.

You’ll ideally have:

• Previous experience working in a commercial brewery, preferably at 10HL+ scale.
• A brewing qualification and/or several years of practical brewing experience.
• A strong understanding of the brewing process.
• Experience operating automated or semi-automated brewing and packaging equipment.
• Excellent attention to detail and a methodical approach to production.
• Flexibility to work across shifts, including occasional evenings and weekends.

Desirable, but not essential:

• Forklift licence.
• Relevant brewing or packaging qualifications.
• Experience working within a SALSA-certified production environment.

Salary range £30k - £35k negotiable dependent on experience.
